Because of its low calorie, high sweetness, good stability and low price, it is widely used in the pharmaceutical, daily chemical, beverage, food, brewing and other industries. The main sweet ingredients contained in stevioside are shown in the table below. Among them, rebaudioside A and stevioside have the highest content, and the content of both accounts for more than 80% of the total content of stevioside. Rebaudioside A (RA) is also the most widely used stevioside reported at present, and its sweetness is 350 to 450 times that of sucrose. In addition, the taste of rebaudioside D (RD) and rebaudioside M (RM) is closer to sucrose than other stevioside ingredients, so it is one of the directions for the development and upgrading of new stevioside products.
